Recipe: All Green Wild Mix Salad
100g Curly Kale Washed & finely cut
50g Parsley roughly chopped
A handful of ground ivy (See Foraging video)
A handful of mint finely chopped
2 Sticks of Celery sliced
½ Cucumber sliced
¼ block of smoked tofu
1 borage leaf very finely chopped
A few borage flowers to garnish
- Mix all the ingredients together in a glass container. Add a dressing (2 cloves of garlic crushed, cold pressed wild flax oil, pinch of salt and tablespoon ACV). Close the lid and let infuse.
- This is chlorophyll rich superfood green salad. It can curb sugar cravings and help oxygenate the blood. It will clean up problem skin. It is also high in calcium and iron. If you miss your juice of the day one of these salads is a perfect alternative. Serve on its own for evening meal or have with main meal with a grain of choice.
